I considered trying 50 healthy recipes for my 50th year but my younger son was not sure that would be something to live to tell about. Maybe I will try that approach during my 52nd year and make something new each week.
I still thought it was a good idea to try one new healthy recipe this year made with an ingredient I had not used before. For dinner one night last week, I made Chickpea Tabbouleh Salad with Tuna from the Every Day with Rachael Ray magazine. Honestly, I was not sure I would like it, but everyone enjoyed it! The verdict was that it would be a better lunch than dinner entree. My younger son who is a foodie, did not know about chickpeas but correctly identified most of the other ingredients – tomato, onion, parsley, mint, black olives, olive oil and tuna. My older son, a college exercise science major and baseball player, was not at home so the real test might be to try it out on him. This recipe fits on his list of foods for athletic performance but might not be exactly what he had in mind.
