During my 51st year, in addition to sharing new experiences, I decided to share new recipes with healthy ingredients, especially ingredients I have not cooked with before.
In preparation, I’ve been collecting recipes for several months and had to start with Almond Butter Quinoa Blondies. They have chocolate chips so what’s not to like?
This recipe is from eatingwell.com and includes quinoa flour which I have not used before. The recipe comes together like any brownie recipe – you cream butter and almond butter, then beat in eggs, brown sugar and vanilla. Next you combine the dry ingredients that have been mixed in a separate bowl – quinoa flour, baking powder and salt. Finally, you stir in the chocolate chips (after tasting a few of them).
My teenage son declared that they are good and taste like other brownies!
Now who has thoughts about what to bake with the remaining quinoa flour?
