Chocolate Balls

My next new recipe is also from a coworker’s lunch and learn recipe, like my previous post of split pea soup.

This recipe comes together quickly. I blended the following ingredients in my food processor into a paste consistency:

1 cup raisins

1 cup chopped pecans

1 cup orange juice

2 Tablespoons almond extract

  

Then I put the following dry ingredients in a bowl:

1 cup brown sugar

5 1/2 oz. cocoa

2 cups almond meal/ flour 

 

Next, I combined the ingredients and let the mixture sit for about 30 minutes.

  

I used a cookie scoop to form the mixture into balls and rolled in powdered sugar.  Coconut is also an option.

  

My teenager initially said they were good although a little weird but the next day he decided he is a fan!
