Well, it’s year #52 and I’m running out of new ingredients to try. This year’s “new thing” will be cooking through A Change in Appetite by Diana Henry. I heard about this cookbook on The Splendid Table podcast. Diana Henry sets out to make her diet lighter and fresher. She decides to eat foods that are “accidentally healthy”, delicious first with healthiness as a bonus. Sounds like a great idea to me!
I start reading through the Summer section of the book and decide on a simple recipe for Nectarine, Tomato and Basil Salad with Torn Mozzarella. This goes together quickly on a weeknight as a flavorful side dish to The Splendid Table’s Fettuccini Alfredo.
I prepare the nectarines, tomatoes, basil and mozzarella and place them in a shallow bowl. Then I season with salt and pepper while sprinkling with balsamic vinegar and olive oil.
