As I cook my way through the summer section of A Change of Appetite, I am impressed by all the salad variations.
The next one I try is Tomato, Melon and Cucumber Salad.
The dressing is 1 1/2 Tablespoons white wine vinegar, 2 Tablespoons peanut oil, 1/4 cup olive oil, 18 mint leaves, 1/2 teaspoon salt & pepper and 1 teaspoon. This is processed in a food processor and checked for seasoning.
Next, you halve 2 1/2 cups cherry tomatoes (mixed colors if available), seed 1 small melon and cut the flesh in cubes, and seed and slice the peeled flesh of 1 small cucumber.
Toss the tomatoes, melon and cucumber with the dressing. Season and enjoy this quick, refreshing summer salad!!
